Rhubarb is a clump-forming perennial vegetable grown for its edible stalks. It features long, thick, dark red stems with a sweet and juicy flavour, perfect for baking, pies, jams, and sauces. The stalks are ready for harvest from early spring, up until the beginning of summer, and they grow rapidly. Rhubarb has large, crinkled green leaves, which are toxic to animals, making it naturally resistant to deer. It is tolerant of drought and heat, provided there is some shade, and is exceptionally easy to grow. Known as the “uncommon vegetable,” rhubarb is a fantastic addition to any home garden.
